Background

The most famous name in the world of whisky is surely Macallan. Its heavily sherried whiskies – viscose, rich, fruity and full-bodied - are considered the best of the best. However this global recognition has come from humble beginnings: a small local enterprise in 1824.

Macallan has the smallest spirits still on Speyside. There are fourteen of these tiny stills, crafted from copper, each holding an initial charge of 3,900 litres (the stills are so famous that they have appeared on the back of a Bank of Scotland £10 banknote!) and they produce a distinctly robust and characterful ‘new make’ spirit. However it is The Macallan's passion for oak that draws most attention. It is derived from the belief that 60% of the flavour of a whisky comes from the cask it is matured in and that oak casks are the single greatest contributor to the quality, natural colours and distinctive flavours of a whisky. Because of this, The Macallan takes a great deal of pride in sourcing, crafting, seasoning and caring for its casks. Macallan’s Spanish sherry seasoned oak casks deliver flavours of chocolate orange, dried fruits and spices; American sherry seasoned oak casks primarily provide sweet citrus, light spice, vanilla and light oak flavours; American bourbon seasoned oak barrels give flavours of sweet citrus, coconut and oak.
